Bruschetta

Serves 8

Ingredients
8 slices rustic Italian bread, about ¾ inch (2 cm) thick extra-virgin olive oil
4 large garlic cloves, peeled and cut in half
   salt and freshly ground black pepper

Method
  1. Place bread slices on a baking sheet and toast under a preheated broiler until the bread is lightly toasted on both sides. In Italy the bread is placed on the charcoal grill to give it a nice smoky flavor.
  2. Remove from the oven and rub one side of the bread with the cut side of a garlic clove. Repeat with remaining slices of bread and garlic cloves.
  3. Drizzle toast with a liberal amount of olive oil. Season with salt and pepper.
